I would make a hot breakfast dish. I would cut up a couple pieces of bacon into a pan (I use kitchen scissors) and cook up the bacon until it's almost done. Chop up the rest of your jojos and toss them in the pan with the bacon. Chop up some onion, or peppers, or whatever you have in the fridge and toss that in too. Sometimes if I don't have veggies, I just pour a little salsa in it. Mix it all up and let the potatoes brown, and the veggies get a bit soft, then you're done! You can scramble or fry an egg to go with it.
